Meet the Host

Hi, I’m Mitch Gibbons. Seven years ago, I left the noise of city life in search of something more honest — more connected. I found it here, on this patch of land in Frog Rock, where I’ve been building a life rooted in sustainability, creativity, and truth ever since.

I created Rest Easy Farm Stay not just as a place for people to unwind, but as a living example of what happens when we slow down and live in alignment with our values. This 25-acre eco haven is a space for regeneration — of the land, of discarded materials, and of ourselves.

Through my upcycling business, The Crafty Wombats, I give new life to materials others have thrown away — creating furniture and pieces filled with character, intention, and soul. You’ll see them throughout the cabins and The Burrow, each one telling its own quiet story of transformation.

But more than anything, what I care about is honesty — with ourselves, with each other, and with the planet. I believe we don’t need more things. We need more truth, more care, and more places where people can reconnect with what really matters.
